Address: Vedole 68 – 43052 Colorno (PR)
The Al Vedel restaurant is a must for all food lovers who want to spend a pleasant evening in the province of Parma, deep in the Food Valley. It began however back in 1780, when it started to offer the traditional specialities of Emilian cuisine, near the town of Colorno, itself already famous. The restaurant offers a typical rustic countryside atmosphere and maintains its tradition of a welcoming family ambient, even if the restaurant is very elegant.
The Al Vedel is a family business led by chef Enrico Bergonzi and his family who continue with the traditions now passed down to the sixth generation, offering variations on traditional Parma cuisine, The wine list is also interesting, offering 1500 different types particularly from small local producers, and with a strong accent on organic wines. There is also the “Cadassa” inside the restaurant, which sells local artisanal meats from the low Parma valley, principaly the COP Culatello of Zibello. The meat cellar is also worth a look, where you can see the meats hung up as tradition dictates. It is part of the Consortium of the Culatello of Zibello and the Association of Traditional Producers.
